2006: A dilapidated building along Texas Highway 29 house Burnet Co. Bar-B-Q. This place has had recent habit of changing hands, but they put out some good 'cue. The ribs here were large meaty spare ribs wih a good peppery crust, and a good smoke line. the meat was tender and flavorful, but it lacked smoke flavor. The brisket had a nice black crust with mild smoke flavor. The meat was lean, but still tender with good flavor.

May15, 2011. This place is open ... but it should have remained closed. The barbecue was terrible. I ordered a two meat plate with brisket and sausage, with a side of beans and potato salad. It was clear that the folks who run it do not know how to slice barbecue because I received a healthy portion of stringy brisket containing large amounts of unrendered fat. The sausage may as well have been Ekrich ... and over-cooked. The sides were unremarkable. The only upside to this place was the pecan cobbler, which was not bad. However, during the course of the meal, my companion and I found two curly hairs in the brisket and potato salad. I will never go back to this place.

DISCLAIMER:

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
