Rick's was a pleasant surprise along a nondescript suburban street nestled among giant faceless office buildings and storage facilities. The food was better than expected, and was the best sampled in this area of DFW. The ribs were smoked perfectly with a great crust, fat well rendered, and smoked flavor throughout the meat. The seasoning was also good, and pleasantly took second fiddle to the smoke. The brisket had a fine smoke line and good crust along with good pull-apart tenderness. The seasoning was lacking, and the crust had good smoke flavor, but bites not blessed with crust lacked that carcinogenic flavor that we craved.

Visited Rick's yesterday, 08-19-09. The brisket and ribs had a good smoke to them, but I detected no seasoning. Thus, thank goodness for the sauce! Sides were mediocre. All in all, too pricy for what we got.

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
